Instructions:

Activate the Yeast:

In a small bowl, mix the warm water and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Make the Dough:

In a large bowl, mix the flour, sugar, and salt. Add the activated yeast mixture and vanilla extract (if using). Stir until you get a smooth, thick batter. Cover the bowl with a clean cloth and let it rise in a warm place for about 45 minutes to 1 hour, or until it doubles in size.

Heat vegetable oil in a deep pan or pot over medium heat. To check if the oil is hot enough, drop a small piece of dough into the oil. If it floats to the top immediately, the oil is ready.

Using your hands or a spoon, scoop small portions of the dough and carefully drop them into the hot oil. Fry in batches, turning occasionally, until golden brown on all sides (about 4-5 minutes per batch).
