Recipe for 2 Persones

  • 2 medium garden eggs (African eggplants), sliced or chopped

  • 2 medium tomatoes, diced

  • 1 small onion, thinly sliced

  • 1 bell pepper, diced (or use chili pepper for a spicy kick)

  • 2 tablespoons palm oil or groundnut oil

  • 1/2 teaspoon seasoning cubes (optional)

  • Salt and pepper, to taste

  • 1 tablespoon fresh parsley or cilantro (optional, for garnish)

Instructions:

  • Prepare Ingredients: Slice or chop garden eggs, tomatoes, onion, and bell pepper.

  • Heat Oil: Warm the palm or groundnut oil in a small pan.

  • Mix Salad: Combine garden eggs, tomatoes, onions, and peppers in a bowl.

  • Dress Salad: Pour warm oil over the vegetables and toss to combine.

  • Season & Serve: Add salt, pepper, and seasoning cubes. Garnish with parsley or cilantro.
