Flavor Profile:
Warm, savory, and herby with za'atar's tangy, nutty taste or the richness of melted cheese. The soft, chewy bread has a crispy crust, enhanced by a subtle richness from olive oil.

Ingredients:

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon instant yeast

  • 1/2 teaspoon salt

  • 1 teaspoon sugar

  • 2 tablespoons olive oil

  • 1/2 cup warm water (more if needed)

  • 2 tablespoons za'atar (or cheese like Akkawi or Halloumi)

  • Optional: Ground meat, tomatoes, or olives for topping

Instructions:

  1. Prepare the Dough: In a mixing bowl, combine flour, yeast, salt, and sugar. Add olive oil and warm water. Stir to form a dough. Knead for about 8 minutes until smooth. Cover and let rise for 1 hour or until doubled in size.

  2. Shape the Dough: Preheat your oven to 475°F (245°C). Punch down the dough and divide it into 2 equal portions. Roll each portion into a round flatbread about 1/4-inch thick.

  3. Top the Flatbreads: Brush each flatbread with olive oil, then sprinkle with za'atar or add cheese or any other optional toppings like ground meat, tomatoes, or olives.

  4. Bake: Place the flatbreads on a baking sheet lined with parchment paper. Bake for 8-10 minutes until golden brown and slightly crispy.

  5. Serve: Enjoy warm, perfect for breakfast, lunch, or as a light snack!
