Ingredients:

  • 1/2 cup cooked chickpeas (or canned)

  • 1/2 cup cooked black beans (or canned)

  • 1 medium tomato, diced

  • 1/4 small red onion, finely chopped

  • 1/2 cucumber, diced

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • 1 clove garlic, minced

  • 1/2 teaspoon ground cumin

  • Salt and pepper, to taste

  • Fresh parsley or cilantro, chopped (optional, for garnish)

Instructions:

  1. Prepare the Ingredients: Rinse and drain the chickpeas and black beans if using canned. Dice the tomato, cucumber, and red onion.

  2. Make the Dressing: In a small bowl, combine olive oil, lemon juice, minced garlic, cumin, salt, and pepper. Whisk well.

  3. Assemble the Salad: In a large bowl, combine the chickpeas, black beans, tomato, cucumber, and red onion.

  4. Toss and Serve: Pour the dressing over the salad and toss everything to combine. Garnish with fresh parsley or cilantro if desired.

  5. Serve: Serve immediately or refrigerate for 15-20 minutes to allow flavors to meld.
