🛒 Ingredients:

1 small eggplant, diced 🍆

1 zucchini, sliced 🥒

1 bell pepper, chopped 🌶

2 tomatoes, diced 🍅

½ onion, finely chopped 🧅

2 cloves garlic, minced 🧄

2 tbsp olive oil 🫒

½ tsp thyme 🌿

½ tsp oregano

Salt & pepper to taste
👨🍳 Instructions:
1️⃣ Sauté the Vegetables:

Heat olive oil in a pan.

Add onions & garlic, sauté for 2 min.

Add eggplant & bell pepper, cook for 5 min.
2️⃣ Add the Tomatoes & Zucchini:

Stir in tomatoes & zucchini.

Add thyme, oregano, salt & pepper.

Simmer on low heat for 20 min, stirring occasionally.
